Thanks :) Corine had been asking TPTB for a long while to try to get my position changed. At least I didn't have to reapply for my job!

For the fries I cut them a bit thick, like smallish steak fries, not super long. I tinfoil a cookie sheet. Then I line up the fries on it, not touching. I season with Lowry's Seasoning salt, garlic powder, chili powder (very lightly) and cinnamon (also lightly since it tends to burn fast). Then I take some oil, veggie or olive, and put some over the fries, then stir them all up on the pan before separating and lining them up again.

Oven 350.

I stir them every 7 minutes. It helps mix up the seasoning, keeps them from burning (I think I am overly paranoid). When they start trying to fall apart when you flip them, that means they are close.

Takes about 20-30 minutes.

One of these times, I might try broiling once they get tender enough so I can actually monitor how crispy they are.
